👩🏻‍🍳 Cook Time: 15 minutes baking
🍴 Servings: Makes 12 croquettes

Ingredients:

900g cooked pumpkin
1 tsp coconut oil
125g kale
75g almond meal flour
1 pinch of salt
1 pinch of pepper
1/2 tsp cumin powder
1 tsp turmeric

Instructions:

Preheat oven to 200°C.

Prepare Ingredients: Place all ingredients as listed in your JTC OmniBlend jug and secure the lid.

Blend: Using the Low function, blend for 30 seconds until all ingredients are well combined.

Shape: Place the mixture onto a flat surface and divide it into small handfuls. Roll each portion into balls.

Bake: Place the formed croquettes onto a baking tray and bake for 15 minutes, or until they are firm and lightly golden.

Serve: These delightful croquettes are best enjoyed warm, paired with perfectly poached eggs. The creamy texture of the eggs complements the earthy flavors of the pumpkin and kale, creating a harmonious and satisfying dish that Mum will surely love.
