5. Mayonnaise or Aioli

Mayonnaise or Aioli can be a challenge and a lot of people divert to the store bought versions, which are usually loaded with additives and may have a high level of salt and/or sugar content. If you make your own mayonnaise you’ll notice the difference straight away – and we doubt you’ll go back to store-bought varieties!

Here is our recipe for Omni Aioli (just omit the garlic for plain mayonnaise)

Ingredients:

  • 2 garlic cloves, crushed
  • 1 teaspoon sea salt or rock salt
  • 2 egg yolks
  • 1 cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons wholegrain mustard
  • 1 tablespoon water

Process garlic, salt and egg yolks in the Omniblend on LOW until well combined. With motor running (still on LOW), trickle in the oil, continuing to blend until it forms a thick mayonnaise. Add the lemon juice and mustard. Add a bit water if you want a thinner consistency! Store in a clean glass jar in the refrigerator.

Serve with fresh veges, or potato or kumara fries!
